Mr C and little princess Akshu recently took a trip to India. They were gone for a little over 3 weeks. We stocked up on the veggies etc before he left and with fewer people to plan meals for (only me and princess Diya were at home) I got to experiment more than usual :)
The three key ingredients in this dish felt as if they did not go together. I wanted to bond them with flavours to balance out the strong-ness in radish, with the starchy-ness of raw banana + potatoes.
The panch phoron mixture used in Bengali cuisines turned out to be the perfect blend, pleasantly surprising even me! The slightly bitter taste of fenugreek helped add that oomph to the banana-potatoes, while the slight sweetness of fennel seeds toned down the radish flavour just a little bit.
With very few ingredients and easy steps, this has won a place in my to-make-again list. I hope you will enjoy it too.
